Italian Sausage Soup

Another quick healthy recipe!

8 oz hot turkey Italian sausage (I normally just use the whole package and double all the other ingredients )
2 cups fat free less sodium chicken broth
1 can diced tomatoes with basil, garlic and oregano
½ cup uncooked small shell pasta (I recommend De Cecco brand in the blue box)
2 cups bagged baby spinach leaves
2 tablespoons grated Parmesan or Romano cheese
2 tablespoons basil

1. Heat large saucepan over medium heat.
2. Remove casings from sausage. Cook about 5 minutes until brown and crumbled.
3. Drain fat from pan.
4. Add broth, tomatoes and pasta.
5. Bring to boil over a high heat.
6. Cover, reduce heat and simmer 10 minutes or until pasta is done.
7. Remove from heat. Stir in spinach until wilted.
8. Sprinkle each serving with cheese and basil.
