I made Falafel last night for the first time - though I pan fried them rather than deep fried them to be healthy - I've also heard of baking them in the oven too! I used a mix of Pinto Beans, crushed tortilla chips, green onions, egg white, cilantro, basil and cumin.
Here I have just added it to the hot skillet.
Almost cooked through!
Served in pita bread with fresh tomato, arugula and avocado - yum!

I thought the main ingredient was chickpeas (garbanzo beans)?
Different versions call for different beans - the recipe I used called for Pinto - but it could easily be adapted :)
